Apple Oatmeal Crumb Cake

Oh my goodness! We had the best coffee cake for breakfast this morning before church. With some of our home canned pears on the side.  It was fantastic!  It took me about 20 minutes to put this together.  Neil ate all his pears and decided he needed a different piece of cake because he had mangled his, but the cake was gone.  Abbie and Jessie split the last piece.

Combine dry ingredients and cut butter in until the mixtures resembles course crumbs. Scoop out 1/2 cup flour mixture and set aside:

1 cup flour

1/3 cup quick oats

1/3 cup sugar

1/3 cup brown sugar (I didn’t pack mine)

1/8 tsp. salt

1/8 tsp. nutmeg

1/4 cup butter, cut into small pieces

Add to remaining flour mixture and beat until blended:

1/4 tsp. baking soda

1/2 tsp. baking powder

1/3 cup apple juice

1 tsp. vanilla

1 large egg

Fold in:

1 1/2 cups apple, peeled and chopped (I used one small apple.)

Pour batter into a greased 8 inch round pan and sprinkle reserved flour mixture over the top.  Bake at 350 for 30 minutes.  Serves 8.
